Try Making a Mahi Mahi Salad for Dinner

Try making a mahi mahi salad for dinner this week.

Ingredients: 2/3 pound mahi mahi, 1 bag of mixed greens, 1 avocado, 1 cob of corn, 1 cucumber, 1 small package of cherry tomatoes, 1 bottle balsamic vinaigrette
Prep (servings for 2):
1. Peel and chop a medium size cucumber
2. Slice in halves a hand full or so of cherry tomatoes
3. Slice 1 avocado
4. Prep mahi mahi on a sheet of foil for grilling.  Season mahi mahi with salt, pepper, and lemon juice.
5. Prep 1 white corn on the cob on a sheet of foil.  Put a pat of butter/salt and pepper into the foil.  Wrap foil tightly around the corn for grilling.

Grill mahi-mahi and corn on the grill for app. 15 minutes.  Cut corn off the cob.  Combine in a large mixing bowl mixed greens, tomatoes, cucumber, and corn with the balsamic vinaigrette.  Allow corn to cool for a few minutes before adding to salad, placing it in the refrigerator can help.  Plate your salad and place 1/3 pound of fish to each plate.  Add avocado and your favorite baguette on the side.

Takes about 30 mins to make and under $20.00!  Yum...
